Here's a potentially silly question.

When I navigate to https://hangouts.google.com/ in Chrome, it shows me a panel of my friends and a lovely image harvested from Google+: a lighthouse, or a waterfall. While these are very nice images, I'd love to be able to customize what shows up in the background. A web search doesn't yield up much, and the forums are full of people trying to change their backgrounds on Android...

Has anyone tried to do this? Is there a setting I'm missing? Help, nerdy backgrounds would make the new Hangouts just about perfect!

This sounds like a good idea/suggestion to be able to customize your own background. I've noticed everytime I refresh the page, a diff background shows up. Checked settings, doesn't seem to be an option to customize background. However, you could provide direct feedback to the hangouts team. In order to do so:

Please use the send feedback feature within Hangouts (clicking on the horizontal three-dots). This will directly send your suggestion straight to the hangouts team. The more feedback given about a certain feature, the more likely that feature will be implemented.
